Easy Teriyaki Sauce

A quick tasty teriyaki sauce made at home that comes together in minutes. This sauce can be used to baste, or as a marinade, stir fry sauce and glaze in all your recipes. What I appreciate most about this recipe is that it's totally customizable. You get to add aromatics that you like and create a taste profile that fits your needs. In this recipe I have added ginger, garlic and chili flakes all of which are optional.

Equipment

  • 1 Whisk
  • 1 Measuring jug
  • 1 small saucepan

Ingredients
  

Sauce

  • 1 tbsp mirin sherry or sake
  • 2 large garlic cloves finely minced optional
  • 2 tsp ginger finely minced optional
  • 6 tbsp soy sauce or tamari
  • 2 tbsp oyster sauce vegetarian or vegan vegetarian or vegan
  • 4 tbsp sugar
  • 3 tsp cornstarch
  • 1 tsp chili flakes
  • 2 tbsp cool water

Instructions
 

Making slurry

  • Mix the cornstarch and water together and set aside.

Making the sauce

  • In a measuring cup, whisk all the other sauce ingredients together. Add cornstarch slurry and mix well.
  • Pour whisked ingredients into a small saucepan and place over medium heat. Bring to a slow boil stirring constantly. Once the teriyaki sauce has thickened remove it from the heat.
  • Allow to cool, then transfer into a container with a tight fitting lid.

Notes

Using Homemade Teriyaki Sauce As A Glaze
Once all the ingredients have been combined, cook your homemade teriyaki sauce in a saucepan as directed above, and then apply as a glaze in your grilled, roasted, barbecued and seared recipes.
As A Marinade
Use your homemade teriyaki sauce as a marinade.  Cook your homemade teriyaki ingredients  in a saucepan as directed above and allow to cool completely.  Apply to whatever you want to marinade and cook as directed.  Discard leftover marinade.
Storage
Store leftover teriyaki sauce in a clean jar with a tight fitting lid.  Store in the refrigerator for 2-3 weeks.  If you notice the sauce starting to change color or develop mold, or smells off,  it’s time to throw it away.
Freezing 
You can freeze your homemade teriyaki sauce in an ice cube tray.  Once frozen store in a Ziploc bag or a container with a tight fitting lid.  
Measurements
Each cube should give you approximately 2 tablespoons.  However, this is dependent on the size of your ice cube tray.  The best practice is to measure the first cube of teriyaki sauce, using measuring spoons.  
If you need 1/4 cup of your homemade teriyaki sauce, you need 2 cubes and so on.
Viscosity 
If you want a thicker sauce, add more cornstarch when making the slurry.  If you want a thinner sauce add water to the ingredients in the measuring jug.
