Smoked Mushroom Pizza With Basil Pesto

Equipment

  • Cookie sheet, pizza stone 12 – 14 inch
  • Parchment paper cut into 11 or 12 inch circles
  • Pastry brush
  • Pizza Peel

Ingredients
  

  • 4 10" Pizza crusts par-baked defrosted
  • 1/2 – 1 cup tomato sauce with basil, garlic and oregano
  • 8-10 oz mushrooms smoked and sliced
  • 2 ear fresh corn kernels removed from cob
  • 1/2 red onion thinly sliced
  • 1/3 capsicums any color
  • 1/2 cup black olives, sliced
  • 2 large jalapenos thinly sliced
  • 16 grape tomatoes sliced in half
  • 1/4-1/2 cup pesto
  • 1.5 tsp chili flakes
  • 2 tsp oregano flakes
  • 2-3 cups mozzarella cheese finely grated
  • 1-2 tsp oil

Instructions
 

Place rack in the middle of the oven. Invert cookie sheet or pizza stone and place on the rack. Pre-heat oven to 450°F 20-30 minutes before cooking pizza.

  • Place pizza crusts on pre-cut parchment paper. Brush oil around the edge of the pizza crust.
  • Using the back of a spoon, spread 2-4 tbsp of pizza sauce around the pizza, taking it to the line where the oil has been brushed.
  • Sprinkle with a little mozzarella cheese. Add all your other toppings, and add more cheese. Sprinkle with oregano and chili flakes.
  • Slide the pizza and parchment paper onto the peel. Using an oven glove, transfer the pizza and parchment paper to the hot inverted cookie sheet or pizza stone.
  • Cook pizza for 15-20 minutes until the edges are golden brown and the cheese is melted.
  • Using the peel remove pizza from oven. Place cooked pizza and parchment paper on to a large cutting board or clean counter top. Spread a layer of pesto over hot pizza. Using a pizza cutter of a sharp butcher knife cut the pie into 8 slices.

Toppings
You can add pepperoni, shrimp, chicken, ham or whatever protein you want.  With the exception of the seafood, all other meats MUST be cooked first.  
Where to get your pizza dough  
Many local pizzeria’s will sell the fresh uncooked pizza dough…including gluten free, and if you are  lucky, cauliflower crust.   You can also find raw dough in stores like Trader Joe’s, WinCo etc.   
I purchase my par-cooked pizza dough from Trader Joe’s in the freezer section.
Vegan Options
Substitute mozzarella cheese with vegan cheese of your choice.
Gluten- Free
Substitute wheat dough for a gluten-free pizza dough or a cauliflower crust.
