Cilantro Lime Rice


Fresh, light and zesty with the subtle taste and aroma of lime, this side dish is the perfect compliment to any seafood dish. There are many different ways to make this delicious side dish, but this is my favorite.

Ingredients
  

  • 1 cup jasmine rice washed and drained
  • 1 1/4 cups of boiling water
  • 2 cloves finely minced garlic
  • 1/4 cup of finely minced onions
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup cilantro leaves chopped & tightly packed
  • 1.5 tbsp lime juice
  • 1 lime zest
  • 1.5 tbsp avocado oil
  • 1/8 tsp better than vegetarian bouillon

Instructions
 

  • In a pot heat oil on medium high.
  • Add onions, salt and cook until translucent. Add garlic and black pepper and cook until fragrant.
  • Add rice and bouillon, sauté for 3 minutes stirring rice constantly. Add lime zest and cook for approximately 1 minute.
  • Add hot water stir, lower heat to a simmer. Cook for 25 min. Turn heat off and leave undisturbed for. 5 minutes.
  • Fluff with a fork. Add lime juice and cilantro, fold in until fully incorporated.
