Cilantro Lime Rice

- 1 cup jasmine rice washed and drained
- 1 1/4 cups of boiling water
- 2 cloves finely minced garlic
- 1/4 cup of finely minced onions
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup cilantro leaves chopped & tightly packed
- 1.5 tbsp lime juice
- 1 lime zest
- 1.5 tbsp avocado oil
- 1/8 tsp better than vegetarian bouillon
In a pot heat oil on medium high.
Add onions, salt and cook until translucent. Add garlic and black pepper and cook until fragrant.
Add rice and bouillon, sauté for 3 minutes stirring rice constantly. Add lime zest and cook for approximately 1 minute.
Add hot water stir, lower heat to a simmer. Cook for 25 min. Turn heat off and leave undisturbed for. 5 minutes.
Fluff with a fork. Add lime juice and cilantro, fold in until fully incorporated.
