Ahi Tuna, Green Onions and Mango Poke (Po-kee)
A simple, yet flavorful dressing for sashimi tuna. The ginger and green onions is accentuate the natural sweetness of fresh tuna. The mango adds a burst of color and acidity that round out the dish.
Ingredients
- 6 oz sashimi grade ahi tuna rinsed, dried and cut into bite size pieces
- 1/4 tsp grated ginger
- 1/4 tsp finely minced garlic
- 1 tsp rice syrup
- 3 tbsp thin soy sauce
- 1 tbsp finely minced serrano peppers
- 1/4 tsp salt
- 1/4 tsp white pepper
- 2 spring onions chopped separating whites from greens
- 1/2 tsp sesame oil
Finishing up
- 1/2 cup mango cut into bite size cubes
- 1/2 tsp sesame seeds
- 1 tbsp minced cilantro
Instructions
Dressing
- In a bowl add garlic, ginger, rice syrup, salt, pepper, thin soy and whisk together.
Tuna
- Add onion whites, minced serrano peppers. Mixed well.
- Refrigerate for 2 hours. Mixing every 30 minutes.
- To serve, add mango, all the green onion tops, sesame seeds, and sesame oil. Mix well and serve over rice.
