Wasabi Crawfish Poke (Po-Kee)

Equipment

Ingredients
  

  • 12 oz boiled crawfish, defrosted rinsed and drained
  • 1-2 tbsp wasabi prepared
  • 1/3-1/2 cup of real mayonnaise
  • 1-2 tbsp avocado oil
  • 2 tbsp sriracha sauce
  • 1/2 tsp white pepper
  • 1 tsp rice syrup or honey optional
  • 4 cloves garlic finely minced
  • 1 lime zest
  • 1 tbsp lime or lemon juice
  • 1/4-1/2 tsp salt
  • 2-4 tbsp spring onions finely diced (reserve 1 tbsp for garnish)
  • 1-2 tbsp cilantro chopped
  • 2 tsp red peppers finely minced

Instructions
 

Dressing

  • In a bowl add mayonnaise, wasabi, avocado oil, sriracha, lime juice, lime zest, white pepper, rice syrup, garlic, and salt. Whisk all ingredients together.

Crawfish

  • Add crawfish to the bowl and mix well.
  • Fold in spring onions.
  • Cover tightly and refrigerate for minimum 2 hours.
  • Remove from refrigerator mix well. Sprinkle with cilantro, green onions and minced bell peppers. Serve over jasmine or sushi rice.

Notes

Wasabi crawfish poke is a versatile dish that can be used in so many different ways, the only thing that limits you is your imagination.  Use in a wrap; lettuce or tortilla.  Or as a “unfried” po’ boy, served on crackers or as a open-face sandwich.  Fill vol au vents, make mini pies, mix in with your potatoes salad, rice or macaroni.  It’s your experience make it want you want it to be.
Substitute
If you don’t like crawfish, use cooked medium size shrimp 31/40 per pound, or steamed lobster cut into cubes, king crab or imitation crab meat. 
Don’t like seafood, use chicken, ham or even beef.  Don’t like meat…use root vegetables that have been blanched.  Food is about you and world in which you live in.
The 2 hour marinade time is important to the overall flavor of the dish.
