
Honey Roasted Carrots With Garlic & Parsley Vg, GF, SF & V Options

Ingredients
- 16 oz carrots peeled and cut into large even chunks
- 1 tbsp garlic minced
- 1/2 tsp ginger
- 1 tbsp honey or maple syrup
- 1 tsp salt
- 1 tsp pepper
- 1 tsp parsley finely chopped
- 2 tbsp butter unsalted
Instructions
- Preheat oven to 425°F
- Add butter to an oven proof pan and melt over medium heat. Add carrots and honey and saute for 60 seconds. Add ginger, garlic, salt and pepper and saute until fragrant, about 60 seconds. Add lemon juice stir well and transfer to preheated oven.
- Roast for 20 minutes until golden caramelized and bubbly. Transfer to a serving dish and sprinkle with parsley.
