16ozcarrots peeled and cut into large even chunks
1tbspgarlic minced
1/2tspginger
1tbsphoney or maple syrup
1tspsalt
1tsppepper
1tsp parsley finely chopped
2tbspbutter unsalted
Instructions
Preheat oven to 425°F
Add butter to an oven proof pan and melt over medium heat. Add carrots and honey and saute for 60 seconds. Add ginger, garlic, salt and pepper and saute until fragrant, about 60 seconds. Add lemon juice stir well and transfer to preheated oven.
Roast for 20 minutes until golden caramelized and bubbly. Transfer to a serving dish and sprinkle with parsley.
