Velvet Paneer In Masala Coconut Milk

Ingredients
  

  • 1 16oz paneer cut into cubes
  • 3 large garlic cloves roughly chopped
  • 1 inch ginger chopped
  • 1 large onion chopped
  • 3 medium tomatoes chopped
  • 1 tsp cumin seeds
  • 3 green cardamoms pods
  • 1/2 inch cinnamon bark
  • 3/4 tsp Salt
  • 1/2 tsp kasmaire chili powder
  • 1/4 tsp turmeric
  • 1 tsp sugar
  • 1 tbsp ground coriander
  • 1 tbsp tomato paste
  • 1 8oz coconut milk full fat
  • 1/2 tsp garam masala divided into 2
  • 1 tbsp finely chopped cilantro
  • 2 tbsp cooking oil

Instructions
 

  • Cut paneer into cubes. Marinade with 1/4 tsp salt, turmeric and chili and set aside for 5-10 minutes.
  • Heat oil in a large pan. Add cumin seeds and allow to crack. Add garlic and cook until fragrant. Add ginger and sauté for 1 minute. Add onions with 2 pinches of salt and cook until soft. Add tomatoes and sauté until soften, approximately 5 minutes. Place in a blender and purée.
  • Rinse and dry pan.
  • On medium heat add 1/2 tbsp of oil to the pan. Lightly fry the marinaded paneer 2 minutes on all sides. Remove and set aside.
  • Wipeout pan and place on medium heat, add the rest of the oil. Add cardamom and cinnamon sauté for 1 minute.
  • Add purée, coriander, chili powder, salt, 1/4 tsp garam masala and tomato paste. Mix well.
  • Add full fat coconut milk stir well. Add sautéed paneer and mix gently to incorporate. Bring to a gentle boil then reduce heat low and simmer for 10-15 minutes. Sprinkle with remaining 1/4 tsp garam masala mix well.
  • Garnish with cilantro and serve with rice, roti or naan bread.
