Ahi Tuna, Green Onions and Mango Poke (Po-kee)

A simple, yet flavorful dressing for sashimi tuna. The ginger and green onions is accentuate the natural sweetness of fresh tuna. The mango adds a burst of color and acidity that round out the dish.

Ingredients
  

  • 6 oz sashimi grade ahi tuna rinsed, dried and cut into bite size pieces
  • 1/4 tsp grated ginger
  • 1/4 tsp finely minced garlic
  • 1 tsp rice syrup
  • 3 tbsp thin soy sauce
  • 1 tbsp finely minced serrano peppers
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 2 spring onions chopped separating whites from greens
  • 1/2 tsp sesame oil

Finishing up

  • 1/2 cup mango cut into bite size cubes
  • 1/2 tsp sesame seeds
  • 1 tbsp minced cilantro

Instructions
 

Dressing

  • In a bowl add garlic, ginger, rice syrup, salt, pepper, thin soy and whisk together.

Tuna

  • Add onion whites, minced serrano peppers. Mixed well.
  • Refrigerate for 2 hours. Mixing every 30 minutes.
  • To serve, add mango, all the green onion tops, sesame seeds, and sesame oil. Mix well and serve over rice.

Fresh Fish
Make sure that the fish is fresh.  You should not be able to detect any odor from your ahi tuna.  If you can smell the fish, then it’s not fresh enough for sashimi.
