Avocado Toast With Cold Smoked Salmon & Chili Crisp

Quick and easy to prepare, delicious and nutritious, avocado toast is all about sun ripened, luscious avocado being spread on toasted bread. In this recipe I used cold smoked salmon with red onion and tomatoes. The condiments of choice were kewpie mayonnaise, vegetarian stir fry sauce and chili crisp, also known as chili crunch. Avocado toast is a versatile dish that can be eaten for breakfast, lunch, dinner or even as a tasty snack in between. Avocado toast is the kind of recipe that is only inhibited by your imagination. Once again, it’s all about the avocado and toasted bread. And that can be any type of bread that you like. Sliced any way that you like. Topped with anything that you like. Here are some other ways that I have prepared this dish. Avocado toast with roasted garlic, tomatoes and white balsamic vinegar glaze. A super thin slice of cold or room temperature prime rib, with horseradish mayonnaise, thinly sliced shallots and a squeeze of lime. Turkey, mayonnaise, green onions, parsley and cranberry sauce. Bang, bang salad shrimp, chili crisp and spring onions. Let your imagination be your guide.

Equipment

Ingredients
  

  • 1/2 medium ripe small or medium avocado
  • 2-3 slices of cold smoked salmon or enough to cover the toast
  • 1 slice toasted bread
  • 1 tsp sliced red onion or 1 tsp green onion minced
  • 4 grape tomatoes cut in half diagonally
  • 1/2 tsp chopped cilantro
  • 1– 2 tsp Kewpie mayonnaise
  • 1/4– 1/2 tsp vegetarian stir fry sauce or a thick teriyaki sauce
  • 1/4 tsp chili crisp optional
  • 1 pinch salt
  • 1 pinch black pepper

Instructions
 

  • Toast the bread and allow it to cool.
  • Cut the avocado in half. Leave the seed in one half cover and tightly with cling film or Seran wrap and refrigerate.
  • Scoop the avocado flesh out of the skin and place it directly onto the toast. Using a fork, spread the avocado over the entire surface of the toasted bread.
  • Sprinkle with a pinch of black pepper and salt.
  • Drizzle 1/3 of the mayonnaise over the avocado, using the fork to spread it evenly.
  • Place half of the onions over the avocado and mayonnaise.
  • Then top that with the cold smoked salmon. Make sure that the entire surface of the toast is covered.
  • Drizzle with 1/3 of the remaining mayonnaise.
  • Add the rest of the onions and top with the tomatoes spreading them all over.
  • Drizzle with the vegetarian stir fry sauce.
  • Add the chili crisp if using. And drizzle the rest of the mayonnaise.
  • Sprinkle on the cilantro, and serve immediately.

Notes

Don’t let it sit too long as the avocado can make the toast soggy.
This is an avocado toast. So outside of the avocado and the toast, you can have whatever condiments and toppings you like. Make it your own. Go on your own magical culinary journey.
