Ackee “Rundown” With Smoked Mushrooms

The national dish of Jamaica with a coconut milk and vegetarian twist. Ackee is the national dish of Jamaica and is typically cooked with salted fish.  Ackee is expensive to purchase, but readily available through Amazon.  If you live in Florida, fresh ackee is available, which is always the best way to prepare this dish. Many dishes you can substitute ingredients for, but not with ackee. There is no substitution!!!!

Equipment

  • Medium skillet with tight fitting lid or small dutch pot

Ingredients
  

  • 18 oz ackee rinsed and drained
  • 8 oz coconut milk full fat
  • 2 cups mushrooms slice smoked is optional
  • 2 roma tomatoes chopped
  • 1/2 scotch bonnet pepper deseeded and finely diced
  • 3 sprigs thyme
  • 1/4 bell pepper red julienne
  • 1/4 bell pepper green julienne
  • 1/4 bell pepper yellow julienne
  • 1/2 medium carrot julienne
  • 1/2 large onion sliced
  • 5 cloves garlic minced
  • 1/4 tsp bouillon better than
  • 1 tsp curry powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 6 allspice/pimento berries dried (optional)
  • 3-4 tbsp cooking oil

Instructions
 

Mushrooms

  • Over medium-high heat, add oil to the skillet. Add mushrooms and cook until golden brown on both sides. Remove from skillet and set aside.

Ackee

  • In the same skillet over medium heat, add garlic, onions, thyme and scotch bonnet/habanero pepper. Add 1/2 tsp of the salt, black pepper and curry powder. Saute until onions are translucent.
  • Add tomatoes and cook for 2-3 minutes. Add coconut milk and bouillon, stir to incorporate and bring to a boil. Add the cooked mushrooms, stir well and reduce heat and simmer for 3-5 minutes. Add capsicums (bell peppers) and carrots and stir well. Continue to simmer for 2 minutes.
  • Gently place the ackee on top of the mushroom sauce. DO NOT STIR. Cover with a tight fitting lid and allow to heat through for 5-7 minutes.
  • Remove from heat. Check seasoning. Sprinkle with green onions and gently fold everything together. Be gentle, or you will turn the ackee to mush! Serve over rice.

Substitutions 
Coconut milk free options:
  1. Substitute with heavy or double cream.
  2. Make a sauce from 1 tsp yellow miso paste, 2 tsp oyster sauce: vegan or vegetarian, 1-2 tsp potato starch, 1 cup of water.  Mix all ingredients together making sure the starch is totally dissolved.  
Yes, you can use corn, tapioca, arrow root, even AP flour in a pinch.
