Ingredients
  

  • 14-16 Dover sole filets rinsed and dried
  • 1.5 tsp Dijon mustard
  • 1 tbsp chopped parsley
  • 1 tsp Salt

Crab Filling

  • 4-5 oz crab meat
  • 1 tbsp minced green onions
  • 1 tbsp finely minced bell peppers
  • 1/2 tsp lemon juice
  • 5 tsp bread crumb panko

Sauce

  • 1/3 cup Mayonnaise
  • 3 tsp Lemon zest
  • 1/2 tsp paprika
  • 1/2 tsp white pepper

Instructions
 

  • Lightly oil a baking dish and set aside.
  • Preheat oven to 400°F
  • Mix the sauce ingredients and set aside.
  • Make crab filling by mixing all the crab ingredients together and set aside.
  • Lay fish filets smooth side up on a cutting board, and spread a small amount of Dijon mustard over all the filets. Sprinkle lightly with salt and pepper.
  • Divide the crab filling between the prepared filets.
  • Roll from the skinniest end to the fatter end of the fillet. Place each dover sole roll, seam side down in the prepared baking dish. Do not roll to tightly or over stuff. This will cause your dover sole roll to burst when cooking.
  • Cover sides and top the mayonnaise sauce and sprinkle lightly with smoked paprika.
  • Bake in the top part of the oven for 20 minutes or until fish is cooked. White and flaky. Allow to stand for 2-3 minutes and then serve.
