Garlic Bourbon Glazed Carrots

Take your carrots to the next level by creating a delicious twist on a favorite side. Glazing carrots not only enhances their natural sweetness, but makes them mouthwatering and appetizing. Adding bourbon and garlic infuses the carrots with another layer of flavor that makes them hard to resist.

Ingredients
  

  • 2 lbs carrots peeled and chopped into 1" cubes
  • 2 tbsp butter unsalted
  • 1 tbsp cooking oil
  • 3 tbsp dark brown sugar
  • 3 tbsp bourbon
  • 1 tbsp garlic finely minced
  • 1 tbsp parsley finely chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Heat butter and oil until foaming. Add garlic and cook for 30 seconds until fragrant.
  • Add carrots sprinkle with 1/2 the salt and cook and medium low heat for 3-5 minutes. DON’T BURN the garlic.
  • Turn heat down or off. Remove pan from heat. Add bourbon. (CAUTION!!! bourbon can ignite. Have a lid handy to smother the flame if this happens) Add sugar, black pepper and the rest of the salt cook until carrots are the desired tenderness.
  • Remove from heat. Sprinkle with parsley and green onions. Drizzle with the glaze and serve.

Notes

I love my carrots a bit more than al dente. If you want the carrots tender… here’s what to do.
Once you’ve put the bourbon and sugar in the pan and the sugar has melted, cover with a lid and turn the heat to low and simmer for 10 minutes or until desired tenderness is achieved. Then to thicken the glaze, turn heat to high and reduce syrup to desired thickness.
Vegan Options
For vegan option use vegan butter and vegan bourbon.
