Smoked Salmon & Iceberg Lettuce Salad

Refreshing, satisfying and easy to prepare. This smoke salmon salad can be customized to suit your personal taste.

Equipment

Ingredients

  • 1 large wedge of iceberg lettuce
  • 1/2 medium avocado cut into cubes
  • 4 oz cold smoked salmon
  • 1 tsp shallots finely minced or red onion
  • 8-10 cherry tomatoes cut into 1/4
  • 1-2 tsp cilantro finely minced
  • 1-2 tbsp blue cheese dressing
  • 1 pinch paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Place the iceberg lettuce in a bowl.
  • In between the lettuce leaves, put salmon, shallots and tomatoes, finishing with some on top.
  • Top with avocado. Add salt and pepper.
  • Drizzle with blue cheese dressing and sprinkle all over with a pinch of paprika.
  • Garnish with cilantro.

Notes

You can use any type of smoked salmon you like.  You can add jalapeno, finely diced bell peppers, cucumber, olives.   
Instead of blue cheese, you can make a basic citron vinaigrette, or honey mustard.  In fact, you can used whatever dressing you like.  
The idea is that the iceberg wedge isn't over taken by the other ingredients.
