Sliced fried potatoes are a delicious easy side to make and can be serve with breakfast, lunch, dinner or with your favorite dipping sauce. Unlike a potato chip, fried sliced potatoes have crispy edges and a soft fluffy center. Season with salt or a blend of dried herbs and spices.

2large potatoes
32ozdeep fryer oil
1large bowl of cold water

Instructions
Using a sharp knife or a mandolin, cut potatoes ¼” thick. You are not trying to create potato chips or crisps.
Place the potato slices in a large bowl of cold water. This will help keep the potatoes from turning brown.
Once all of the potatoes are sliced, drain, rinse and cover with fresh water. Put the potatoes in the refrigerator for 30 minutes. Soaking them in water helps to remove the starch and makes for a crispier end product.
After 30 minutes, drain the water and pat potato slices very dry. The drier they are the crispier they will fry up.
Heat oil in a deep fryer to 365°F. Place all the dried potatoes into the basket fryer and slowly submerge into the hot oil. Fry the potato slices for 7-10 minutes or until the potatoes are golden and crispy around the edges and fork tender in the center.
Remove potatoes from hot oil and let drain in the fryer basket. Lightly sprinkle salt and herbs if desired.
Serve as a side dish with breakfast, lunch or entrée.
